VERSATILITY OF THE TORTILLA

Corn is the proud inheritance of our ancestors, and we celebrate every day with the wealth of our Mexican gastronomy, and of course, we make tortillas with corn.

Tortillas are an essential element of the diet of many Latin American countries, mainly Central America
and Mexico. It is a circular, flat staple food made of ground corn, cooked on a griddle. It is of Pre-Colombian origin.

What is most interesting is to learn all the things you do with a tortilla.

Taco

When you put stuffing inside (shredded chicken or meat) and roll it. You get a plain taco.

TACO DORADO

When you fry the same taco.

TACOS DE CANASTA (basket tacos)

You take the tortillas and fold them in half and wrap them in a serviette and put them in a basket.

TACOS SUDADOS (sweat tacos)

The same tacos put one on top of the other covered with a serviette, they sweat, keep warm, and soft.

FLAUTA (flute)

You get giant tortillas and stuff them and wrap them like a flute and fry them.


ENCHILADAS

You take the same taco and pour a guajillo chile sauce it becomes an enchilada.


ENCHILADA SUIZA

But if you grate cheese on top, add a sauce, and put it in the oven, you get a Swiss Enchilada.

QUESADILLA

You put grated cheese and fold it; you get a quesadilla.


DOBLADILLA

You put hamburger meat or pork rind with green sauce or mushrooms, fried beans, or sliced poblano peppers with cream.

CHILAQUILES

Cut the tortillas into small pieces, fry them in oil, add tomato sauce,
shredded cheese, and cream.

ENFRIJOLADAS

However, putting mashed beans in a frying pan and bathe the tortilla in this sauce, you get enfrijoladas.


ENTOMATADAS

The tortilla with tomato sauce and cheese on top makes delicious entomatadas.

ENJOCOCADAS

AZTEC SOUP OR TORTILLA SOUP

TOTOPOS

You cut the tortilla in triangles, fry them until they are hard, and dip one in any dip of your liking, and you have a great snack.


SOPES

You have an oval and thick tortilla with a high edge, fry it, spread fried beans on top, afterward put shredded chicken or meat, sauce, sliced lettuce, chopped onion, coriander, cream, and shredded cheese.

You can eat a classical sope.


GRINGA

You put in a flour tortilla, pastor meat (the meat on the spinning top) manchego cheese, small pieces of pineapple, cover it with another tortilla put it on the griddle until the cheese melts. Try a “gringa” they are soooo good. (story of the origin of the name “gringa” at the end.

PANUCHO

If you get a thick tortilla, open it in the middle, stuff it with fried beans, pour cochinita pibil sauce on top, garnished with chopped red onion, sliced lettuce, and you have a typical panucho from Yucatán.

SALBUTE

A thick fried tortilla stuffed with fried pork meat with garlic, onion, sliced lettuce, dry cheese, and red onion— typical Yucatan gastronomy dish.

LEGEND OF HOW AND WHERE THE NAME “GRINGA” ORIGINATED.

At the end of the “39;60s, a community of American students established themselves in the Anzures neighborhood (very fancy area) In Mexico City, taking advantage that the owners of big mansions adapted them as student residences, giving a boost to the district and many restaurants and
commerces opened. There was a taco restaurant called “El Fogoncito”; where this story begins.

Two students called Jennifer Smith and Sharon Smith were frequent customers of the place but did not want to eat tacos with corn tortillas, dreading their teeth would become yellow.

Still, one day they saw the “taquero” (the man who prepares tacos) preparing several with flour tortilla, they asked him about them, and the “taquero” explained he was preparing “quesadillas”

Hence the girls ordered the same tortillas, adding pastor meat and double tortilla. That was the start; from then on, every time they went to eat, they would call the same thing; the other customers heard the combination and liked it, so they started ordering “gringas” the tortillas like the “gringas” (American
girls) order.


LA VERSATILIDAD DE LA TORTILLA

El maíz es la orgullosa herencia de nuestros ancestros, y celebramos cada día con la riqueza de la gastronomía Mexicana, y por supuesto, hacemos las tortillas con maíz.

La tortilla es un elemento esencial de la dieta de muchos países Latino Americanos, principalmente
México y Centro América. Es de forma circular hecha de maíz y cocida en una parrilla. Es de origen Pre-Hispánico.

Lo que es más interesante es saber todas las cosas que se pueden hacer con la tortilla.

TACO

Cuando le pone relleno (pollo o carne deshebrada) lo enrollas y tienes un simple taco.

TACO DORADO

Cuando fríes el mismo taco.

TACOS DE CANASTA

Si envuelves los tacos sin freír, apilados, en una servilleta y los guardas en una canasta.

TACOS SUDADOS

Los mismos tacos, uno encima del otro cubiertos por una servilleta, sudan y se mantienen calientes y suaves.

FLAUTA

Con tortillas grandes las rellenas y las envuelves y las frÍes.

ENCHILADAS

A los tacos le pones salsa de chile guajillo encima y TENDRÁS ENCHILADAS.

ENCHILADAS SUIZAS

Pero si le pones queso encima, le agregas una salsa, le pones queso y en el horno, tendrás Enchiladas Suizas.

QUESADILLAS

Pones queso en medio, doblas la tortilla; y tendrás una quesadilla.

DOBLADILLA

Le pones carne molida o chicharrón en salsa verde o champiñones, frijoles refritos, o chile poblano con crema y obtienes una dobladilla.

CHILAQUILES

Corta las tortillas en pequeños pedazos, los fríes, les agregas salsa de jitomate, queso rallada y crema.

ENFRIJOLADAS

Poniendo frijoles en salsa en un sartén y bañas la tortilla en esta salsa, obtienes enfrijoladas.

ENTOMATADAS

La tortilla con salsa de tomate con queso encima, se hacen deliciosas entomatadas.

ENJOCOCADAS

Cuando sumerges la tortilla en jocoque y la rellenas con rajas de chile poblano, o pollo deshebrado o chorizo, le pones cebollas picada, queso y crema las pones en el horno, te encantaran las enjococadas. Yummy yummy.

TOSTADAS

Cuando fríes la tortilla hasta que este dura, le pones pollo o carne deshebrada, lechuga rebanada, crema, salsa de tomate, comerás unas ricas tostadas.

SOPA AZTECA O SOPA DE TORTILLA

Rebanas la tortilla muy delgadas, la fríes o la tuestas en el horno, preparas un caldo de jitomate y chile mirasol o guajillo, pones la tortilla en la salsa, le agregas crema, queso, que aguacate, y a saborear una
sopa deliciosa.

TOTOPOS

Cortas la tortilla en triángulos, los fríes hasta que estén duros, y les pones un dip que te guste, y obtendrás una deliciosa botana.

SOPES

Los sopes son ovalados y un poco gruesos con un borde en la orilla, se fríen, se les pone frijoles refritos encima, pollo o carne deshebrada, salsa, lechuga rebanada, cebolla picada, crema y queso rallados.

GRINGA

Pones en una tortilla de harina, carne al pastor, queso manchego, pequeños pedazos de piña, lo cubres con otra tortilla, lo pones en la parrilla hasta que se derrita el queso. Prueba una gringa son tan buenas. (historia del origen del nombre gringa al final del artículo.)

PANUCHOS

En una tortilla gruesa, la abres a la mitad, la rellenas de frijoles, le pones cochinita pibil, salsa encima y la adornas de cebolla morada picada, lechuga rebanada, y obtendrás un típico panucho de Yucatán.

SALBUTE

Una tortilla gruesa rellena de carne de puerco con ajo, cebolla, lechuga rebanada, queso Cotija y cebolla morada, platillo típico de la gastronomía Yucateca.

Hay más o menos 257 diferentes maneras de usar la tortilla dentro del territorio Mexicano. La creativdiad del Mexicano no tiene fin. Disfruten la tortilla.

LEYENDA DE DONDE Y COMO NACIO EL NOMBRE DE GRINGA

A finales de los años sesenta una comunidad de estudiantes Americanos se establecieron en la colonia Anzures (una zona muy elegante) de la Ciudad de México, aprovechando la circunstancia de que los dueños de casas muy grandes las convirtieron de residencias estudiantiles, esto le dio un “boom” a la zona y se empezaron a abrir restaurantes y comercios.

En unos de esos restaurantes “El fogoncito” es donde nuestra historiaempieza. Dos estudiantes de nombre Jennifer Smith y Sharon Smith, era clientes asiduos, pero no querían comer tacos con tortilla de maíz, porque tenían miedo de que sus dientes se hicieran amarillos..

Pero un día vieron al taquero preparar varias tortillas de harina, y le preguntaron al taquero que Que preparaba, y les contesto que quesadillas, entonces las muchachas le dijeron que querían las mismas tortillas, pero que les pusiera el pastor y le pusiera una tortilla encima.

Ese fue el comienzo; de ahí en adelante cada vez que iban le pedía lo mismo; los otros clientes escucharon la combinación y les gusto, y empezaron a ordenar “!gringas” decían las mismas tortillas que las “gringas” ordenan y así nacieron las “gringas”.
